Bourbon Chicken

2 lbs chicken cut into bite sized pieces
1 TBSP olive oil
2 cloves minced
1/4 tsp ginger
3/4 tsp crushed red pepper flakes
1/4 cup apple juice
1/3 cup brown sugar
2 TBSP ketsup
1 TBSP cider vinegar
1/2 cup water
1/3 cup soy sauce
1 TBSP corn starch

In a large skillet add oil and cook chicken until lightly browned. Remove chicken.
Add remaining ingredients and stir until well dissolved over med heat.
Add chicken back and bring to a hard rolling boil.
Reduce heat and simmer for 20 minutes.
Serve over hot rice!
